An ecologically rich polyculture farm, we use fully organic farming methods on our mixed fruit and vegetable market gardens. We are also home to pasture raised grass, fed cattle and free-range chickens.
Our philosophies value biodiversity and ecological balance, striving to leave land in a better condition than when we found it, value animal welfare and ethical practices, and provide educational opportunities around sustainable and organic food processes.
Executive Chef, Perry Hill, spends a great deal of time on the farm overseeing the farming practices and building his relationship with the farmers ensuring that together we produce the best menus for both our guests and our environment.
