Our New Head Chef

We are incredibly excited to announce our new head chef Carl Johnson.

Having worked at Heston Blumenthal’s Michelin star restaurant in the UK, Carl traded the British countryside for sunnier shores, moving to Australia 4yrs ago and gracing our best restaurants ever since.

Previously head chef at The Bridge Room, Carl’s most recent role has been at the world-renowned Quay, perfecting his combination of classical and modern cooking techniques.

His love of seasonality and using products that are in their prime makes him a perfect fit for The Botanica and we hope you’re as excited as us to see what he has in store…
